Ideas of Libby’s Pumpkin Roll Recipe

For Cake       

2/3 cup Libby’s 100% Pure Pumpkin

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup powdered sugar

3/4 cup all-purpose flour

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon salt

3 eggs (large size)

1 cup granulated sugar

1 cup chopped walnuts (optional)

For Filling:

1 pkg. (8 oz.) cream cheese (softened)

1 cup powdered sugar (sifted)

6 tablespoons butter or margarine (softened)

1 teaspoon vanilla extract


  1. Firstly, prepare your oven. Preheat it to 375 Grease 15/10 inch jelly-roll pan. Line it with wax paper. Grease and flour the paper also and sprinkle a thin cotton kitchen towel with powdered sugar.
  2. Take a small bowl and combine flour, baking powder, baking soda, cinnamon, cloves, and salt. Meanwhile, beat eggs and sugar in a large mixer bowl until thick and beat in pumpkin. After that, stir in flour mixture. Spread it evenly into prepared pan. It will be better if you sprinkle nuts over it.
  3. Bake it for about 15 minutes or less. Then, loosen and turn the cake onto your prepared towel. Peel the paper off properly and roll up cake and towel together.
  4. In your mixer bowl, beat cream cheese, powdered sugar, butter and vanilla extract. Mix it until smooth. Unroll cake and remove towel. Spread cream cheese over the cake and then reroll cake. Wrap in plastic wrap and keep in the fridge at least one hour.
