  1. Green Beans Cranberries

Ingredients:

  • 1 ½ pounds green beans (trimmed)
  • ¼ cup dried cranberries
  • 2 tablespoons extra-virgin olive oil
  • ½ cup roasted, unsalted mixed nuts (chopped)

Directions:

  • First, bring a large pot of water to a boil and then add 1 tablespoon salt and the green beans. Cook until tender, of about 4 to 6 minutes.
  • Meanwhile, combine the nuts, oil and cranberries in a large bowl.
  • After tender, drain the green beans and transfer to that bowl.
  • Add ½ teaspoon salt and ¼ teaspoon pepper and toss to coat.
  • Serve warm for the best taste.
  1. Green Bean Salad

Ingredients:

  • 1 ½ pounds green beans (trimmed)
  • 2 tablespoons sherry vinegar
  • 1 tablespoon Dijon mustard
  • 3 tablespoons extra-virgin olive oil
  • ½ cup sliced almonds (toasted)
  • Kosher salt and pepper

Directions:

  • Same as the first step of the first recipe; bring a large pot of water to a boil and add 1 tablespoon salt and the green beans. Cook them until tender about 6-8 minutes. Drain them and run under cold water.
  • Then, rub the beans between your hands vigorously to break them in half lengthwise and transfer to a bowl.
  • Whisk the mustard, vinegar oil, ¼ teaspoon salt and ¼ teaspoon pepper. Drizzle it over the green beans and sprinkle with the almonds.
